Howdy Everyone! I was chatting online and came across an awesome way to increase your veggies and add flavor to you eggs. Eggs are an awesome and versitle food. Checkout the info below.
Egg whites - make an omelet. I saute in cooking spray: 1/2 slice of videlia onion, a couple of portabello mushrooms, a roma (Italian) tomato, and a handful of spinach until heated and the spinach is wilted. Move that to a plate for holding. Spray the pan with cooking spray again and pour in 1/2 cup of egg whites and cook until just getting firm and cooked to the top of the surface of the egg. Shake the pan and if needed use a spatula and fork to kind of jimmy the egg where it sticks to the pan so that it is not sticking anywhere (practice and the right pan is the key - this may take some time but if it sticks, just turn it into a scramble!) and sprinkle on 0.5 oz fat-free feta cheese on one half of the egg. Top that with the veggies and fold the egg over to make the omelet and slide it out of the pan. That'll get you about oh 350 calories and a hefty dose of your daily veggies for the day.
Substitue ANY veggies and ANY low-fat cheese.Make it your own.
